Everything AND the kitchen sink.
There are shopping districts for just about everything in Manhattan (been to the button district?) The area around the Bowery in Chinatown is home to many kitchen supply stores. J&S is a good, centrally located place to start. As you enter, the first thing you have to overcome is the feeling that you just snuck past the "Wholesale Only" sign. But don't worry; they're happy to sell you a single ladle.
Ladles are $3.95, seemingly professional woks from Taiwan, $12.00. Scales, rice cookers, pots and pans of every size, they have everything but the kitchen sink. Wait a sec-there they are, by the door!
